Chicken Noodle Soup for the Inner Man

Don’t care what anybody says nothing beats a big bowl of Chicken Noodle soup when the weather and you get chilly or your feeling blue.

OK, this is not an instant … I fancy soup! … and ten minutes later you’re sitting down with the TV (in my case the football news) and a steaming bowl of CNS… But more of a planned therapeutic course of action, that in itself calms the soul.

Before I get onto all that cooking malarkey … I will run through two of the poor opposition.

Batchelors: Cup a Soup, Chicken Noodle

Ingredients (largest quantity first)

Water, Noodles (10%) – Durum Wheat – Semolina – Salt, Chicken (5%), Leek,(3%), Maltodextrin, Flavour Enhancers – Monosodium Glutamate – Disodium 5’-ribonucleotides, Maize Starch, Potato Starch, Yeast Extract (contains Barley), Salt, Parsley, Natural Flavourings, Turmeric. Also has an allergy warning … Contains Wheat Barley and Gluten … Produced in a factory which handles milk powder.

Heinz: Chicken Noodle Soup

IngredientsThe cooking caviat: I am not a chef, hell I’m not even a gourmet eater … just a simple chap who is totally practical and likes to eat well. I know what I do, with minimal preparation or advanced planning and usually use what is to hand… If it’s in the cupboard I use it…

The practical Chicken Whatever soup.

First the Stock… Given the choice between making a stock with a fresh raw chicken/carcass or cooking the chicken … eating the chicken and making stock with the carcass and what is left… give me the latter every time…. and having cooked the chicken you have two options.

1. Use the bones to make stock … and then soup or gravy
2. Or throw them away… how wasteful.

So put the remnants of the big chicken carcass and all the bones, skin etc (raw giblets if they came with the chicken) in a pan and add celery (4 stalks), 2 medium leeks, 2 medium onions, 2 large carrots (all the veg chopped into chunks) Crush half a bulb of garlic in it goes skin and all, couple of Bay leaves, Half a teaspoon each of dried rosemary, parsley and thyme and a good helping of black pepper. Cover with water and put another 2” depth over the top … in a biggish pan it will probably be about 4L – 6pts (ish)…. bring to boil and simmer for 2hrs (ish)

Small chicken carcass … halve the ingredients … if you have fresh herbs, so much the better … some people add cloves, chillies etc … less of this … more of that … No Garlic … used dried garlic, celery salt – whatever … Experiment!

You can buy Chicken stock… but if you have roast chicken … make soup.

After it’s cooked … cool … skim the fat off the top … sieve … and remove all the bits… uncooked chicken and carcass will produce a clear liquid… mine is always cloudy as I have cooked the chicken first.
This liquid will keep for a few days in the fridge or a few months if frozen … if freezing you can split it into smaller portions … I never freeze as I make soup straight away…. hedonist that I am.

The Soup.

This is like déjà vu … same ingredients but peeled and chopped a bit finer … More veg and you have a thicker soup … simmer until the veg is cooked … add the cooked rice noodles, and some shredded chicken … warm all though … season to taste…… all in about 20 mins.

I like mine so you could dance on the top.

Try adding Bok Choy or spring onion … top with fresh parsley or coriander … swap the noodles with rice, egg noodles or pasta … Lemongrass or ginger … chillies or all spice…. add soy sauce or sweet corn … the options are endless.

You’re making and eating it … You choose!

That is the beauty of making your own soup… you can have whatever ingredients you want and you know what you are eating … If you don’t put it in … it ain’t there.

And it can help you lose weight by providing you with a nutritious meal, incorporating part of your 5 portions of veg a day with minimal fats.
